Caramel Malt Pilsen

Durst´s Caramel Pils is the lightest of all Durst´s Caramel malt- types. It was originally created to add the beer more full-bodied taste without darken its color. This malt produces a slightly sweet flavor in the beer that is similar to honey, as the unfermentable caramel compounds contained in this malt remain also inside the finished beer. Furthermore these particles can lead to an improvement in foam stability.

Munich Malt Dark

Barley malt, which has an even greater depth of color than Pilsner and Vienna malt from 20 to 60 EBC. The green malt is produced with warmer temperatures and a high degree of steeping, similar to the Viennese. In the smoldering phase, moist air is circulated in the kiln through a circulating air shaft up to about 70°C for about 4 to 10 hours, and kilning takes place at up to 100°C. The green malt is used as the main ingredient for malting. It is the main ingredient for malty, darker beers and comes in different color strengths (between 15 and 70 EBC). In addition to its darker color, this malt usually has a pronounced malt aroma, which is why it is used in brewing not only for coloring but also to intensify the flavor.

Pilsen Malt

The most widely used base malt in the world, made exclusively from barley. It is particularly light and can be used as a base for all types of beer (dark beers are sometimes colored only by colored malt). Germination takes place with falling temperature from about 20° on the last day to a minimum of 14°C, with a softness of 41-44% after spraying in the germination box. It is slowly smoldered at 55-60°C until breakthrough (water content on the kiln <12%) and kilned at about 80-86°C. It has a color strength of 2.5-4 EBC and is indispensable for the production of pilsner and pale and other light beers.
